Tips

The potatoes can be cut and placed in the pot with the water and kosher salt and kept at room temperature for up to 4 hours before cooking.

Place quartered potatoes in a pot, cover with cold water. Bring to a boil, add salt and cook until just tender, about 5–7 minutes. Drain well.

Heat oil in a large skillet over medium-high heat. Add the drained potatoes in a single layer. Let them cook undisturbed until the bottoms are golden and crispy, about 5 minutes.

Stir in onion and bell pepper. Continue cooking, add all your seasoning and stir occasionally, until the vegetables are softened and the potatoes are crisp on all sides, about 10–12 minutes.
